While there has been speculation about the origin of the "Chicago" style pizza, the
idea is a thicker and fuller pie which helps to bear cold northern winters. With sauce steaming on top and thick layers of cheese, it can be stuffed with any choice of toppings and can fill the hungriest of appetites.
We make our deep dish dough with real butter and cornmeal. It gets stretched out to line a buttered pan, then stuffed with mozzarella cheese and any manner of topping combinations your stomach desires. When this pie comes out of our oven it gets topped with marinara that is made from our own personal recipe. This sauce starts with sautéing freshly chopped onions, garlic, and tomatoes which are then cooked down with Italian spices.
Our 8" deep dish is cut into 6 slices and will feed 2 to 3 people while the 12" is cut into 8 slices and can feed 6 to 8. We advise considering the amount and type of toppings you choose when building your pizza as too many toppings may not cook thoroughly or cause it to become too soggy or greasy (too many veggies or meats for example).
